Author?s Cuisine

Author?s cuisine strongly influenced by naturist principles, in fusion with the essence of home cooking, but with progressive aesthetics; mixing colors, textures and flavors in order to achieve an ensemble of nutrition and pleasure. Also, wishing to personalize the experience of the diner trough an invitation to be a witness of the culinary process, with the Chef.

  • Sautéed Local potatoes, with stewed lentils bathed in curry-coconut sauce and fresh green leaves (vegan and gluten free)
  • Arepas of local corn varieties, with eggplant napolitana, fresh tomato and avocado, with a touch of fresh herbs and toasted walnuts. (vegan, no gluten) (optionally, with the incorporation of local goat cheese)
  • Chañar caramelized vegetable Quiche with hints of mixed cheeses, served with a fresh salad.
  • Cherry cheesecake with chañar
  • Algarrobo cake with 3 milks sauce and caramelized fruit
  • Banana and toasted wheat pancakes with chañar sauce and toasted nuts.
Alejandra Soto, vegetarian chef native of the south of Chile, specialized in vegan cuisine with naturist influences. Through her cooking, pursues to respect the essence of the ingredients as for sensorial exaltation and nutritherapist principles, making use of some traditional values of home southern cooking, and presented in creative author?s proposals, with a progressive-comfort food style.
